Brooklyn's Semilla explores a "vegetable-forward” tasting menu all originating from a 400+ square food kitchen, with chef José Ramirez-Ruiz, pastry chef Pam Yung and their team creating imaginative plates that earned the restaurant a Michelin star in its first year.

Their philosophy goes beyond creativity though, it is about the technique of minimizing food waste by integrating often discarded or overlooked parts of a vegetable, such as the skin of an onion, and using that to complete a dish on the menu.
